 ingredients


1 pound of small-cut, skinless, boneless chicken breast

1 tbsp olive oil

1 onion, diced

2 cloves of garlic, minced

1 red bell pepper, diced

1 can of dried black beans, rinsed and draining

1 cup of frozen corn

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

8-10 flour tortillas

1 cup of shredded cheddar cheese

serving ingredients: salsa, sour cream, and cilantro (optional)



Instructions


Olive oil should be warmed up in a big skillet over medium heat. Cook the chicken for about 5-7 minutes, or until it is no longer pink.

Add the onion, garlic, and red bell pepper to the skillet and sauté for another 3-5 minutes, until the vegetables are softened.

Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes, until the vegetables and beans are heated through.
